Summer Eats: Agua Fresca + Salsa de Aguacate

Tulum life requires that we hang out at the pool nearly every afternoon. Our family holds pool time sacred, which means it stretches on into the early evening. By the time we’re ready to head inside, about eleventy billion snack times have come and gone. So, I make it a point to bring an abundance of snacks and drinks with us to the pool.

Everyone’s favorite drink is a refreshing aqua fresca. I tend to use whatever fruit looked good at the fruteria. Luckily, fresh, ripe fruit is readily available year round. We’ve tried dozens of fruit combinations, and haven’t been disappointed yet. My personal favorite combination is agua fresca de piña y maracuya. Or, pineapple and passion fruit. You can sub about four cups of your choice of fruit to this recipe. Play around with it and let me know your favorite combo!

Agua Fresca de Piña y Maracuya

1 ripe pineapple – about 3 1/2 cups

2 passion fruits – about 1/2 cup

6 cups of water

1/4 cup of sweetener (optional; I omit sweetener)

Put all ingredients in the blender. Blend on high for about 30 seconds; I stop when the passion fruit seeds are only slightly chopped. Pour into a pitcher through a strainer. Refrigerate and serve over ice.

As for snacks…what is pool life without chips + avocado? Not to toot my own horn, but I do make the best guacamole. (Toot Toot!) Pickled jalapeños and radishes, yum. Unfortunately, it is also a wee bit time consuming. When we’re ready to hit the pool, I only have as long as it takes for the girls to get their suits on. So, now I make a salsa de aguacate for pool days. No chopping required.

Salsa de Aguacate

3 ripe to over-ripe avocados

3 tomatillos

1 jalapeño or serrano pepper – cut lengthwise and discard seeds if you want minimal heat

1 lime juiced

1/2 cup of water

Salt to taste

Half a bunch of cilantro (optional; I only use if I happen to have extra on hand)

1/4 cup of cream or sour cream (optional; I find the avocado plenty creamy; plus, vegan)

Put all ingredients in the blender. Blend until smooth and creamy. Pour into a bowl and serve with tortilla chips and veggies.
